Estate and Philosophy
Primitivo Collantes continues to make wines following the tradition established by his family in the nineteenth century, when they moved to Chiclana de la Frontera. The estate owns two vineyards in the municipality, Pozo Galván (17.30 ha) and Matlián (19.53 ha), both within the DO Jerez. The soils are composed entirely of albariza, with a high capacity to absorb water during the winter months, allowing the vines to access it even during the dry summers. The climate is warm and meridional, with maritime influence from the Atlantic Ocean, creating ideal conditions for the development of velo de flor. Primitivo Collantes’ viticulture is certified organic, and fermentations occur spontaneously with wild yeasts.

Maritime Climate and Flor Aging
As in the rest of the province, Chiclana enjoys a warm southern climate, tempered by the maritime influence of the Atlantic Ocean. This makes it an ideal location for the aging of wines under a flor yeast veil, which is essential to the organoleptic characteristics of our wines, giving them a light body, fragrant aromas, a clean taste, and a slightly bitter finish.

Artisanal vermouth produced from a selection of neutral, dry, and sweet wines, infused with herbs, spices, aromatic plants, and fruit, including orange.
Dark mahogany in colour with coppery nuances. Aromatic, with clear notes of the herbaceous infusions. Slightly sweet on the palate, with a balanced bitterness that results in a very pleasant finish.
Best enjoyed in a wide glass with ice and a slice of lemon or orange. An ideal aperitif, well suited to olives, mussels, smoked meats, guilds, or any type of preserved foods.
