Matalian is a dry white wine made 100% from Palomino Fino grapes sourced from the estate vineyard of the same name. Free-run must undergoes wild fermentation at controlled temperatures in stainless steel to preserve primary fruit aromas. Highly varietal in character, the wine shows notes of white and stone fruits, citrus, and mineral nuances that reflect the tension of the albariza soils. An ideal summer white, best served well chilled.
Suggested pairings: Fried fish, seafood, sushi, white meat, scrambled eggs, pizza, pasta, cured sausages, tartare, octopus, and charcuterie.

Socaire is a dry white wine made 100% from Palomino Fino grapes sourced from Finca Matalian. The wine is aged for 24 months in "botas" previously used for fino, which impart complex secondary aromas. The barrels are filled completely to prevent the development of flor. An expressive and gastronomic white with umami character. Serve chilled.
Suggested pairings: Fried fish, seafood, white meat, scrambled eggs, pizza, sushi, pasta, cured sausages, tartare, octopus, and charcuterie.

Fino Ceballos is made from 100% Palomino Fino grapes from the organic vineyards of Pozo Galván. The free-run must is wild-fermented at controlled temperatures of 22–24 °C. Fortified to 15%, it is aged for three years under the criaderas and soleras system. This is a very approachable fino that still showcases fantastic fruit. Serve at 7 °C. Suggested pairings include tapas, soups, shellfish, fish, semi-cured cheeses, and Jamón Ibérico.

Fino Arroyuelo en Rama is made from free-run must of Palomino Fino grapes from Finca Matalian, with wild fermentation at controlled temperatures. Fortified to 15%, it undergoes five years of biological aging under the criaderas y soleras system. This wine is a selection of the finest "botas", bottled by hand and only on demand. The ultimate expression of fresh flor, it is a wine for purists and for those seeking emotion. Serve at 7 °C. Suggested pairings include mollusks, seafood, seafood stews, and bluefin tuna. Contrast pairings include Asian cuisine.

Amontillado Fossi comes from Finca Matalián. The free-run must from organic Palomino Fino grapes is wild-fermented at controlled temperatures and fortified to 15%. After five years of biological aging, it is refortified to 17.5% and undergoes a further eight years of oxidative aging, for a total of 13 years. Serve at 14 °C. Suggested pairings include tuna with onions, pickled and marinated appetizers, and cured cheeses. Contrast pairings include Indian cuisine, artichokes, wild asparagus, and dark chocolate.

Los Cuartillos Moscatel Viejo comes from two hectares of Moscatel de Grano Menudo from Finca Matalián. The must is partially fermented, fortified to 15%, and aged for two years in barrels. Serve at 17 °C. Suggested pairings include charcuterie, blue cheeses, and ice cream. Contrast pairings include candied fruit, tea biscuits, and white and dark chocolate.

Medium Collantes is a blend of two wines: 75% Amontillado and 25% Los Cuartillos Moscatel Viejo. The Amontillado balances the sweetness of the Moscatel, creating a very versatile wine. Serve at 16 °C. Suggested pairings include game meat and the fattier parts of tuna. Contrast pairings include Moroccan cuisine and spicy Asian dishes.
