Oleum
Laguna de Blas

Oleum Laguna is a family-owned olive oil producer based in Villaconejos, in the Community of Madrid, where the craft of oil-making has been passed down through successive generations. The estate’s values are expressed in four principles — passion, dedication, humility, and respect for the natural world — and these inform every decision in the grove and at the mill. All oils are produced from 100% certified organic olives grown on the estate’s own finca, located just minutes from the Oleum Laguna mill, ensuring that fruit reaches the press at peak condition. Harvest takes place in October, when the olives are fully green, and all oils are cold-extracted to preserve the full aromatic complexity and natural character of the fruit.
Our oils

Arbequina 3l
The 100% Arbequina is a certified organic extra virgin olive oil produced from green olives harvested on the estate during October and November, cold-extracted to preserve the full freshness and nuance of the fruit. On the nose, expressive and vibrant, with green notes evoking tomato, apple, and almond. On the palate, notes of tree nuts carry through, with a pleasant and lingering aromatic finish. Clean and approachable — well suited to daily use as a finishing oil.

Cornicabra 500ml
The 100% Cornicabra is an oil of considerable character and clearly defined personality. On the nose, a green-fruited profile with notes of tomato, apple, banana, and a subtle touch of artichoke. On the palate, the aromas carry through faithfully, balanced by a pronounced bitterness and peppery finish characteristic of the variety. Rich in monounsaturated oleic acid, vitamin E, and natural antioxidants, it is also a notably stable oil. Pairs exceptionally well with red meats, grilled and boiled vegetables, octopus, anchovy, and dishes with garlic.

Arbequina-Cornicabra 500ml
The Arbequina & Cornicabra is a certified organic extra virgin olive oil of great complexity, produced exclusively from fresh olives harvested on the estate in October and cold-extracted to capture the full intensity of the fruit. On the nose, a vibrant green-fruited character with notes of tomato, tomato leaf, grass, apple, and almond. On the palate, an initial sweetness gives way to a warm, well-balanced bitterness and peppery finish. Clean, elegant, and full of flavour. Versatile at the table — equally at home with fish, shellfish, grilled vegetables, fresh salads, mild cheeses, cured preparations, pasta, and toast.
