Borja Pérez
– Ycoden Daute Isora –
ONLY LOCAL VARIETIES
Sited on the island of Tenerife, within the Ycoden Daute Isora appellation (DO) — which is one of the five official appellations on the island — this area vividly reflects the remarkable diversity of soils and microclimates that can be found across its territory, which spans just over 2,000 km².
Borja Pérez embodies volcanic soils, an Atlantic climate, and Alisios winds, working with local varieties such as the white Marmajuelo and the reds Listán Negro, Baboso Negro, and Vijariego. Borja farms 5.5 hectares and cultivates two additional hectares rented from local growers, applying sustainable practices, organic treatments when necessary, and some biodynamic methods, all in service of expressing the vineyard.

minimal intervention winemaking
The small cellar in La Guancha, in northern Tenerife, follows the same principles as the vineyards: minimal intervention winemaking, native yeasts, and no temperature control. Each plot is vinified separately in stainless steel or cement tanks, with ageing in used foudres or barrels. The only additions are bentonite for some wines and sulphites applied solely before bottling.
The aim is to produce elegant wines that possess a distinct soul, offering not only immediate enjoyment but also a remarkable potential for long-term cellaring and development over the years.

Artifice Llanito Perera 2020
Artifice Llanito Perera 2020. Still white wine. 100% Listán Blanco from one of the best vineyards in the DO for this grape; a paraje wine made from organically farmed grapes at 650 m altitude. Whole clusters are directly pressed, and the turbid must ferments in a 25 hL French oak foudre. The result is akin to a light skin maceration, with fantastic structure and volume on the palate. After 12 months on its lees, the wine is lightly filtered and bottled. 3,650 bottles produced.

Ignios Listan Negro 2020
Still red wine. 100% old-vine, ungrafted Listán Negro (País) from the Bellavista Norte plot, Borja’s favourite grape variety. “If yields are kept under control, Listán produces alluring and highly expressive wines,” he explains. Fermented with whole stems in concrete, then aged for 12 months in a four-year-old foudre. The wine is textural, deep, and complex. 2,584 bottles produced.

Macerated for 17 days in a concrete vat with 50% whole stems. The wine was racked into a 30 hl, five-year-old foudre, where malolactic fermentation took place and where it remained for 12 months until bottling. A vertical, direct wine with fresh, crunchy fruit and the distinctive volcanic character of Tenerife wines. 3,901 bottles produced.
