Isastegi Natural Cider
Isastegi is a historic family estate located in the town of Tolosa, in the Basque Country of Spain. Cider has been produced at the farm since at least the 17th century, reflecting a long-standing connection between the land, the apple, and Basque culture. In 1984, the family made the decision to fully dedicate the estate to cider production
Today, the third generation leads Isastegi, building on the knowledge of previous generations while continuously advancing quality and sustainability. The estate is surrounded by carefully managed apple orchards, and all apples used in production come from within a 15-kilometer radius, ensuring a strong link to the local ecosystem.

ONLY local apple varieties
Since 2017, Isastegi has been certified under the PDO Euskal Sagardoa designation for natural Basque cider. This certification guarantees local origin and quality, allowing only approved local apple varieties grown in the Basque Autonomous Community.
All Euskal Sagardoa ciders are produced naturally, must pass both sensory and laboratory analysis, and are made without additives or corrections. Isastegi proudly carries the red Euskal Sagardoa neckband. From secret spice blends to slow-cooked perfection, every bite holds a surprise. Come taste the passion — one plate at a time!

The family continues to expand its orchards in higher-elevation plots around Tolosa. These new plantings, along with all existing orchards, are farmed according to organic principles, officially certified in 2021.
Fermentation takes place spontaneously using only indigenous yeasts, allowing the character of the apples and the terroir to express themselves fully.
Isastegi is also a place of gathering and tradition. The estate features modern pressing and bottling facilities alongside a cider house with large oak kupelas, where the traditional txotx season is celebrated each spring. During txotx, visitors and locals alike come together to taste the new vintage directly from the barrels while enjoying classic Basque cider house cuisine.
