
Las Moradas
de San Martín
Las Moradas de San Martín is the work of viticulturist and winemaker Isabel Galindo — a deeply personal project devoted to recovering Garnacha in its purest expression. The estate farms a single mountain pago at 900 metres above sea level, on granitic sandy soils of gravel and exposed rock, where certified organic viticulture and very low yields produce small, loosely-clustered bunches with remarkable natural balance. Only indigenous varieties are grown, with maximum respect for the biodiversity of the estate and minimal intervention in the cellar. Alongside Garnacha, the estate is also quietly reviving Albillo Real — a nearly extinct native white variety once grown in the heart of Madrid, and one of the most singular whites in the region. The result are wines of singular authenticity: terroir-driven, elegantly structured, and built to evolve.
A Royal Tradition, Reclaimed
The wines of Madrid were once among the most celebrated in Europe — the wines of the Royal Court, praised by Cervantes, Lope de Vega, and Calderón de la Barca, and traded across the continent at a premium. After the Spanish Civil War, the vineyards were largely abandoned as populations moved to the city. Las Moradas de San Martín was founded in 1999 with a clear mission: to recover that lost heritage, beginning with five years of terroir research across the subzones of DO Vinos de Madrid before settling on a single high-altitude pago in the Sierra de Gredos.

One Pago, One Standard
The estate works exclusively from a single mountain pago at 900 metres in the San Martín de Valdeiglesias subzone — a site of granitic gravel, rocky outcroppings, and free-draining sandy soils swept by persistent winds. Old vines ranging from 40 to 110 years have developed deep root systems that access subsoil moisture, delivering consistent fruit quality even in difficult vintages. Yields average around 2,000 kg/ha — a fraction of regional norms — concentrating the natural balance of acidity, polyphenols, and mineral character that defines the estate’s wines.

Farming and Cellar Philosophy
Certified organic since 2002 and biodynamic since 2014, Las Moradas works with the conviction that the vineyard’s natural equilibrium is the wine’s best preservative. In the cellar, this means wild fermentation with indigenous yeasts and bacteria, no fining, no filtration, and SO₂ additions at zero or near-zero levels since 2008. Nothing is added that the terroir has not already provided. Time does the rest — and the wines reward it, ageing with exceptional grace and showing younger than their years.

Garnacha and Albillo Real
The estate’s two varieties are both indigenous to Madrid, and both are treated as direct expressions of their terroir rather than as stylistic vehicles. Garnacha — more commonly associated with early-drinking wines — reveals its full ageing potential at this elevation, developing balsamic, savory complexity while retaining the freshness and structure of the mountain site. Albillo Real, a nearly extinct native white variety, produces wines of striking individuality: aromas of pear, honey, and apricot on the nose, giving way to a saline, slightly bitter finish that calls for the table. Both are gastronomic wines in the fullest sense.

Tasting Notes: Deep cherry red. Aromas of blackberry jam, prune and cocoa, alongside wild aromatic herbs on a mineral background. Lively and elegant on the palate, with mouth-filling fruit, firm structure and a deep, lingering finish.

Tasting Notes: Fresh and aromatic, with aromas of flowers, plum and woodland. A pronounced mineral background characteristic of the granitic soils. Complex on the palate, with rich, mouth-filling fruit and a long finish.

Las Luces
100% Garnacha. Single vineyard of 3.25 hectares, planted in 1916. Minimal intervention. Manual, nocturnal harvest. Fermentation begins naturally with indigenous yeasts and bacteria. Malolactic fermentation takes place in new 500-litre French oak barrels. The wine is clarified naturally by means of winter cold settling and racking, without fining or filtration. Aged for 12 months on its own lees, followed by 8 months in new French oak barrels. Produced only in outstanding vintages — six vintages to date.

Albillo Real
100% Albillo Real. Indigenous and historical grape from Madrid of great value because of its singularity. Mean vine age: 40–80 years. Minimal intervention. Manual, semi-nocturnal harvest, carried out plot by plot, in two passes. Clusters are whole-cluster pressed and transferred to tank where fermentation begins naturally with indigenous yeasts and bacteria. 30% of the wine is produced without sulphites, providing greater richness, complexity and creaminess. The wine is clarified naturally by means of winter cold settling and racking, without fining or filtration.Aged for 6 months in used French oak barrels of 500 litres, with bâtonnage each full moon.
Tasting Notes: Pale in colour, with aromas of pear, honey, and white flowers — orange blossom and jasmine. Unctuous palate, silky, with a lightly saline finish reflecting the minerality of the granitic soils, and enhanced by a slight bitterness characteristic of the variety that makes it highly gastronomic.
